Knowledge Skills and Aspirations for Healthy Eating

Knowledge of healthy eating is conceptualized as knowledge of recommended intake for fruits and vegetables, knowledge of food preparation, and knowledge of applied nutrition such as reading nutrition labels. Skills and aspirations surrounding healthy eating include cooking and shopping skills, motivations around eating, enjoyment, and competence. (Pinard et al 2010).
